Okay, this may not surprise you, but here is one of my favorite dessert recipes – Coffee Squares. These are cake-like, not like a coffee cake. Also, it is pretty rich so small pieces are in order. For a slight variation I use flavored coffees for the icing.

1/2 cup butter
1 cup brown sugar
1 egg
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 cup hot coffee

In a large bowl cream the butter and sugar. Add the egg and vanilla and mix well. Into a separate bowl sift the flour, salt and baking powder. Alternately add the flour mixture and the hot coffee to the creamed mixture. Mix well and pour the batter into a 9-inch square pan. Bake at 350 for 30 minutes.

Icing:

1 1/2 cups powdered sugar
1 Tblsp. cocoa
1/4 tsp. salt
1/4 cup melted butter
cold coffee (not a lot needed)

Into a small bowl sift together the sugar, cocoa and salt. Pour in the melted butter, and add the cold coffee one tablespoon at a time, mixing well, to make a spreadable icing. Frost the cake when completely cooled.
