I bet you thought with all of this baby stuff I would be absent today. Ha!

I have created a totally new page especially for Easy Recipe Thursday, with links to all of my recipes. Since I am in the dessert section of my mental cookbook, I will post this recipe. It is really easy, and oh so yummy! I will warn you, though, that this is hard to put down, and if you aren’t careful you’ll eat half a pan before you realize it. My grandmother used to make this, and she called it pine bark – I don’ t know why, but it is easy, fabulous, and totally addictive.

1 section saltine crackers
2 sticks butter
1 cup light brown sugar – packed
1 package chocolate chips (once I mixed dark chocolate and regular semi-sweet chips – I recommend this highly)

Preheat the oven to 350. Line a cookie sheet with foil and place saltines on the foil. Bring the brown sugar and butter to a boil. Allow to boil for 3 minutes, stirring almost constantly. Pour this caramel mixture over the saltine crackers and spread to an even layer. Place in preheated oven for 5 minutes. Remove from the oven and pour chocolate chips on top. As they begin to melt, spread them into an even layer as well. The back of a spoon works well. Cool and refrigerate. When it is cold, simply break into pieces. Keep refrigerated.
