I am really coming to the end of recipes that I consider “easy,” which explains why I am putting out a recipe for salad. I made this for a recent church potluck, and it was good. My only warning: don’t pour the dressing on the lettuce until you are ready to serve it. Pouring it on and then waiting for three hours, in retrospect, is not a great idea. I will post the recipe as I received it, which is for a large group, but you may want to cut it back a little. Three heads of lettuce is way more than most people need. I did two, and it filled up the biggest bowl I have – until it marinated in salad dressing for three hours. I was a little concerned also that there were no ingredients in the salad except lettuce, but it was still good. I guess you could put whatever else you wanted.

2 cups vegetable oil
3/4 cup cider vinegar
1/3 cup lemon juice
1/2 cup chopped parsley
2-3 cloves minced garlic
1/2 tsp. salt
1/2 tsp. pepper
2 cups Romano cheese
3 heads lettuce

Tear lettuce and put into large bowl. Mix other ingredients in jar and shake until well mixed. Pour onto torn lettuce and serve.
